Pear 'n Pistachio Growing Oatmeal Recipe| Quaker Oats
  • 1/2 Cup(s) Quaker® old-fashioned oats
  • 1/4 Cup(s) peeled and chopped pear
  • 1 packet(s) no-calorie sweetener
  • 1/4 Teaspoon(s) Cinnamon
  • 1/8 Teaspoon(s) Nutmeg
  • 1/8 Teaspoon(s) Vanilla extract
  • 1 Pinch(s) Salt
  • 3/4 Cup(s) fat-free milk
  • 1/4 Cup(s) canned pure pumpkin
  • 1/4 Ounce(s) shelled pistachios (about 12), chopped

Cooking Instructions

In a nonstick pot, combine all ingredients except pumpkin and pistachios. Mix in 1 1/4 cups water. (Don’t worry if this seems like a lot of liquid. It will thicken up!) Bring to a boil and then reduce to a simmer. Add pumpkin and cook and stir until thick and creamy, 12 - 15 minutes. Transfer to a medium bowl and let slightly cool and thicken. Top with chopped pistachios!

Serving Tips: If having this oatmeal for breakfast on The Hungry Girl Diet plan, add a side of 2 hard-boiled (or scrambled) egg whites.
