A fun flavor twist with a little kick —a rice cake with buffalo-style chicken topped with cheddar and a drizzle of ranch or blue cheese for a creamy finish.  

Ingredients

  • 2 Quaker® Rice Cakes - Lightly Salted
  • 1/2 cup cooked shredded chicken
  • 0.5 tbsp buffalo sauce
  • 2 tbsp shredded cheddar cheese
  • 0.75 tbsp ranch or blue cheese dressing
  • Optional garnish: chopped gren onions, diced celery or blue cheese crumbles

Cooking Instructions

  • In a medium bowl, toss the shredded chicken in buffalo sauce. (Optional: Heat for 10-15 seconds or until warm)
  • Top each rice cake with the buffalo chicken.
  • Sprinkle with cheddar cheese, drizzle with ranch or blue cheese dressing, and garnish with your favorite toppings.
