Lemon Raspberry Overnight Oats is a yummy way to brighten up your morning. This recipe combines tangy lemons and the sweetness of raspberries for a make-ahead breakfast option that tastes like a spoonful of summer.
Ingredients
- 1/2 cup Quaker® Oats-Old Fashioned
- 1/2 cup low-fat milk
- 1/2 teaspoon vanilla extract
- 1/2 cup low fat vanilla Greek yogurt
- 1 tablespoon lemon curd
- 1/4 cup fresh raspberries
- 1 tablespoon chopped hazelnuts
- 1/2 teaspoon lemon zest
Cooking Instructions
- Add Quaker® Oats to your container of choice and stir in milk and vanilla extract.
- Layer yogurt, lemon curd, raspberries and hazelnuts.
- Sprinkle with lemon zest on top and refrigerate overnight.
* Can substitute low fat lemon Greek yogurt for vanilla Greek yogurt and lemon curd. Let steep for at least 8 hours in a refrigerator 40° F or colder. Best to eat within 24 hours.
