• 1-1/2 Cup(s) all-purpose flour
  • 1 Cup(s) Quaker® Oats (quick or old fashioned, uncooked)
  • 1/2 Cup(s) firmly packed brown sugar
  • 1/2 Cup(s) chopped nuts (optional)
  • 1 Tablespoon(s) Baking Powder
  • 1/2 Teaspoon(s) Baking Soda
  • 1 Cup(s) mashed ripe bananas (about 3 medium)
  • 5 Tablespoon(s) margarine or butter, melted
  • 1/2 Cup(s) fat-free milk
  • 2 egg whites or 1 egg, lightly beaten

Cooking Instructions

Heat oven to 400°F. Line twelve medium muffin cups with paper baking cups or spray bottoms only with cooking spray. In large bowl, combine flour, oats, sugar, nuts, if desired, baking powder and baking soda; mix well. In medium bowl, combine bananas, margarine, milk and egg whites; blend well. Add to dry Ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Fill muffin cups almost full. Bake 17 to 19 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes. Remove from pan. Serve warm.

I substituted whole wheat flour for half of the flour, substituted a flaxseed egg for the egg, substituted three tablespoons of unsweetened applesauce for three of the five tablespoons of butter, added 1 teaspoon vanilla, and added a generous 1/4 teaspoon of cinnamon. The muffins turned out soft, moist, and not too sweet. Recipe yielded 36 mini muffins, which only needed 14 minutes bake time.

Rated 5 out of 5 by from Good, but watch the baking time! The muffins were very, very good! I used old fashioned oats and added chocolate chips (I know, I know...). I'm writing only to say that my muffins were done in 15 minutes. I may have underfilled the muffin cups, because the recipe made sixteen muffins for me. Seventeen minutes would have totally overbaked them.
