Spinach Oat Quinoa Patties

  • 2 1/2 cups quinoa, precooked
  • 3/4 cup Quaker® Old Fashioned Oats
  • 4 eggs
  • 7 ounces feta cheese
  • 4 cups fresh spinach, chopped
  • Sea salt & pepper to taste
  • Olive oil for frying

Cooking Instructions

In a large mixing bowl, place cooked quinoa, oats, eggs, feta cheese, chopped spinach, salt and pepper and combine until all is mixed. Place in the fridge to set for 30 minutes. Take out the mixture and form 10 to 12 patties with your hands. Heat the oil in a frying pan on medium heat. Add the patties and fry for about 2-3 minutes on each side or until golden brown

Rated 3 out of 5 by from Pretty good I used what I had on hand which included frozen spinach and shredded cheddar cheese. The cakes were simple to make and tasted pretty good. I was hoping to feed them to my toddler but they fall apart. I had them set up in the fridge overnight, not just half an hour... maybe that’s why? I’ll use this recipe as a base to concoct more variations.
