• 1/2 pound lean ground beef
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 7 cups water
  • 1/2 cup Medium Quaker® Barley*
  • 1/2 cup sliced celery
  • 1/2 cup sliced carrots
  • 1/2 teaspoon basil
  • 1 bay leaf
  • 1 bag of frozen vegetables (9 ounces)

Cooking Instructions

In 4-quart saucepan or Dutch oven, brown ground beef. Add onion and garlic. Cook until onion is tender; drain off juices. Add remaining ingredients except frozen vegetables. Cover, bring to a boil. Reduce heat; simmer 50-60 minutes, stirring occasionally. Add frozen vegetables; cook about 10 or until vegetables are tender. Add additional water if soup becomes too thick upon standing.

Serving Tips: *If using Quick Quaker® Barley, substitute 2/3 cup quick barley for medium barley and decrease water to 6 cups. Cook ground beef, onion and garlic as directed above. Add remaining ingredients including frozen vegetables. Bring to a boil. Reduce heat to low; cover. Simmer 15 to 20 minutes or until vegetables and barley are tender.

Rated 5 out of 5 by from Warm Up Your Winter A great and super hearty soup. We love to take it on long distance kayaking trips by packing it in our thermoses. I have made this recipe at least a hundred times. Please note that two ingredients are missing from the web recipe compared to the box recipe. You do need to add a 14.5 can of diced tomatoes and 2 beef boullion cubes. I always add a few more bay leaves and sometimes use roast beef instead of hamburger. Either is super tasty. A favorite of my family!

Rated 5 out of 5 by from Recipe has been in my family for 3 generations! I grew up with this recipe. We called it hamburger soup. After my mom passed away, I found it, hand-written in my Grandmom's writing on a yellowed index card. A quick google search on ingredients led me here. This soup is so delicious and I'm so happy that my kids can grow up with it too. It looks like they never added the boullion and a 14.5 oz can of whole tomatoes, so be sure to add those (I use beef broth and it was great).

Not only is it the best Vegetable soup it has the added health benefit of barley it's one that my husband loves too. So this, hands down, is a 5 star recipe.

Rated 1 out of 5 by from Watery, flavorless--how does Quaker allow this? Quaker admitted 7 months ago that this recipe is missing a key ingredient and said they would get their web team to fix it. There is way too much water and no flavor. I cut way back on the water and added bouillon cubes and Worcestershire sauce.

Rated 5 out of 5 by from missing an ingredient! I have made this in the past, very similar to recipe on box, but when I was finished, it looked like water with vegetables, meat and barley. I believe this recipe is missing the bouillon! I added some beef bouillon and it was wonderful.

Rated 1 out of 5 by from This was not good! There was no salt, no beef broth, no bouillon in the soup. It was totally flat. I had to add salt, pepper and beef bouillon to make it edible. It makes me wonder if you proof your written recipes or test them yourself.
