Cooking Instructions

Stir together all ingredients. Form the dough into tablespoon-sized balls and refrigerate an hour before eating. Store leftovers in refrigerator, covered. Makes 12 bites.

Rated 5 out of 5 by from Really Tasty Energy Bites! I've been a competitive mountain biker and now fatbiker (snow bike) for over 25 years. I'm always searching for a good energy source. I've tried pretty much every pre-packaged energy bar out there. Some are palatable and better than nothing but, they are expensive and I seem to never have one around the house when I'm headed out on a ride and I've never been completely satisfied with the taste and/or performance. I've made my own energy bars before and some are pretty good. Problem is they take a long time to make and don't keep for very long. Then I stumbled upon this recipe somewhere and thought I'd give them a try. I can unequivocally say these are BY FAR the best energy bars I've made to date! They are soooo easy to make, requires no cooking, provides a great carb source plus a little protein from the almond butter. These give me a really good energy burst halfway through my rides and keep the hunger pains at bay. One thing I add that the recipe doesn't call for is a bit of coconut oil. Probably about an 1/4 of a cup (for a double batch). It adds to and complements the flavor plus is also an excellent energy source. These are so tasty and work so well that if I don't bring enough to give to my riding buddies they complain all ride long!
