  • 1/2 Cup(s) Cinnamon
  • 1/4 Cup(s) cane sugar
  • 1 1/2 Teaspoon(s) Vanilla extract
  • 1 Cup(s) Dark Brown Sugar
  • 1/4 Cup(s) Canola Oil
  • 1/2 Cup(s) evaporated fat free milk
  • 1/2 Cup(s) strong coffee or espresso (not hot)
  • 1 Cup(s) semi sweet chocolate chips
  • 1 Cup(s) white chocolate chips

Cooking Instructions

Preheat oven to 350 degrees. Pulse the Quaker Old Fashioned Oats in food processor, until ground to a flour-like consistency (this doesn’t take too long). Add Whole wheat flour, salt, baking powder, baking soda, cocoa cinnamon and cane sugar. Pulse a few times to mix. In a mixing bowl, beat the egg, then add the vanilla, oil, evaporated milk & coffee. Whisk to blend. Combine the two mixtures, in bowl. Mix well. Fold in the chocolate chips. Scoop into lined muffin tins. Fill nearly to top. Bake for 22-24 minutes.

Rated 1 out of 5 by from Totally wrong! This recipe is whacko. It calls for 1/2 cup of cinnamon - enough to ruin anything. The list of ingredients does not include an egg, which is called for, and the recipe does not use the cup of dark brown sugar that is called for.
