  • 1 1/4 Cup(s) (2-1/2 sticks) margarine or butter, softened
  • 3/4 Cup(s) firmly packed brown sugar
  • 1/2 Cup(s) granulated sugar
  • 1 Egg(s)
  • 1 Teaspoon(s) vanilla
  • 1 1/2 Cup(s) all-purpose flour
  • 1 Teaspoon(s) Baking Soda
  • 1 Teaspoon(s) ground cinnamon
  • 1/2 Teaspoon(s) salt (optional)
  • 1/4 Teaspoon(s) ground nutmeg
  • 3 Cup(s) Quaker® Oats (quick or old fashioned, uncooked)

Cooking Instructions

Heat oven to 375°F. In large bowl, beat margarine and sugars until creamy. Add egg and vanilla; beat well. Add combined flour, baking soda, cinnamon, salt and nutmeg; mix well. Add oats; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 9 minutes for a chewy cookie or 10 to 11 minutes for a crisp cookie. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Serving Tips:
Bar Cookies:
Press dough onto bottom of ungreased 13 x 9-inch baking pan. Bake 25 to 30 minutes or until light golden brown. Cool completely in pan on wire rack. Cut into bars. Store tightly covered.

Variations:
  • Stir in 1 cup raisins or chopped nuts.
  • Omit spices; stir in 1 cup semi-sweet chocolate chips, butterscotch chips or peanut butter-flavored chips.

COOK NOTE:

High Altitude Adjustment: Increase flour to 1-3/4 cups and bake as directed.

Rated 5 out of 5 by from Nice and Crispy....loved these! I don't usually like oatmeal cookies but I really needed to use up this oatmeal so I thought I would give these a try. So good! I added some craisins, walnuts and chocolate chips. Not overly spicey (which is what I didn't like about some I've tried in the past). Crisp yumminess!

Rated 5 out of 5 by from Yummy!! My dad's favorite cookie is oatmeal, so I wanted to make some for his birthday. I don't usually like them so I don't keep a recipe on hand. Found this one and thought it seemed easy/quick enough. They are so delicious! Followed the recipe exactly and baked them for 8 min and they are oh so gooey and yummy. I will keep this recipe on hand from now on.

The recipe is simple, basically three steps, QUICK. The cookies are very soft until cooled, even sinking through my rack before I covered it with waxed paper. After cooling, they are the perfect balance of crunchy and chewy, rich and sweet, lightly spiced, DELICIOUS!

Rated 5 out of 5 by from Sooooo yummy I made these for my hubby because he loves oatmeal cookies! I had to use coconut oil instead of butter and they actually turned out to be delicious! I was just a bit concerned because my dough looked extremely dry. I even had bits of leftover oats that didn't make it into the mixture. My stand mixer even had trouble combining the ingredients. To my surprise, the cookies came out so moist, I was very impressed! Definitely making these again very soon.

Rated 5 out of 5 by from Loved these! I do love oatmeal cookies in general, but I LOVED this recipe! I have used the Vanishing Oatmeal Cookie recipe many times in the past but this will be my new go to. We added raisins and made some soft, others crispy. Both were good. Give these a try.
