Basil, Berry and Walnut
Oatmeal
A syrupy-sweet berry gastrique, fresh fruits and crunchy nuts will elevate your oatmeal to breakfast nirvana.

Preparation Time: 45 minutes
 
Makes 4 servings
For Berry Gastrique:
Unsalted butter 1 teaspoon
Shallot, peeled and minced ¼
Fresh berries
(strawberries, raspberries, blueberries)
2 cups
Sugar
(depending on the sweetness of the berries)
4-5 tablespoons
White wine 3 tablespoons
White wine vinegar
Pinch of salt
2 teaspoons
Cooking Method:
1.
Cook the shallots in butter over medium low heat until translucent, about 5 minutes.
2.
Add remaining ingredients (berries, sugar, white wine, vinegar, and salt) and bring to a boil, then drop to a simmer and cook until fruit is very tender, about 15 minutes.
3.
Puree mixture and pass through a fine mesh strainer to remove fine seeds.
4.
Taste to adjust seasoning and tartness, and then chill to hold.
For Assembly:
Quaker® Old Fashioned Oats 1 cup
Fresh berries for garnish 1 cup
Walnuts, chopped and toasted ½ cup
Fresh basil, chiffonade  
Water 1 ¾ cups
Orange juice 1/8 cup
Sugar 2 teaspoons
Cooking Method:
1.
Cook oatmeal in the water, orange juice, and sugar.
2.
Serve each portion of oatmeal with a drizzle of the berry gastrique and garnish with the fresh fruit, walnuts, and basil.
